My sister and I were comparing soup recipes recently. My favourite tomato soup is cream of tomato. I don’t mind chunky ingredients. While my sister prefers her soups mild and delicate and only smooth. This made me think about soups and how we tend to stick to the same old ones.

So I decided to investigate further. Just how many different kinds soup recipes are there? And maybe experiment with some of my own too.

You cant go far wrong with a recipe from Pinch of Yum, Linsay does some fantastic recipes although some are much more complex, this is a simple homemade soup that is delicious.

Warning for Vegetarians: This is not a vegetarian soup though. If you want to turn it vegetarian a recommendation from one of Linsay’s readers was to try replacing the bacon with smoked salt. I think this is a great idea.

3 Rich and Creamy Cream of Tomato Soup

This is the one that no one seems to be able to pull off. Or maybe it’s just the low-fat version that is difficult. I admit that for years my favourite soups was the shop bought Heinz Cream of Tomato Soup. Rich and creamy and sweet (due to sugar overkill). It is perfect for popping in a flask for long cold walks on the moors or a trip up to the allotment. (Hmm, maybe its the locations rather than the soup?)

Becuase I liked this one I never really bothered with making my own. They just didn’t seem the same. It wasn’t until I read another blog (sorry to the author I don’t remember now which one) that I realised my thinking was all wrong. They said why try to create the shop bought one when you can make so many more tomato soups with much better tastes.  As proven by the variety of soups included in this post.

Then when I did the Virgin Diet my tastes changed and my sugar research showed that shop bought soups rely too much on added sugar and not enough on ingredient combinations. Of course, the sweetness of the sugar can be used combined with the tangy flavour of the tomatoes however there is far too much sugar in most shop bought soups these days. A scary amount, in fact, and that explained why I like many others like them so much. Even so, I am still in pursuit of that creaminess. Maybe I need to do some experimenting.

Unfortunately, this recipe uses fire roasted tomatoes which have a distinct and unique flavour that is difficult to reproduce. Unfortunately, we don’t seem to be able to get fire roasted tomatoes here in the UK so the general advice is to use normal tomatoes and instead add Liquid Smoke.  Liquid smoke will add smokiness and sweetness to the mix. Alternatively, you can use sun-dried tomatoes or even roast them in the oven. Fire roasted tomatoes taste sweeter and richer than normal tomatoes so this is what you are aiming for in any replacement.

For me, this complicates what was a quick and easy meal to make.
