Easy Honey Glazed Chicken with Rice and Baby Spinach


Honey Glazed ChickenThis delicious honey glazed chicken recipe is great if you want something that is both quick and easy to do and also very tasty. It is perfect for dining with friends and also family meals. It is also perfect for one or two diners.

I love this because the glaze makes it really tasty and doesn’t take ages to do. Also, it is quite economical as well.

This is a highly adaptable recipe and you can swap the vegetables or the glaze to suit your own tastes. It’s one of my favourites and I do different glaze mixes to vary the taste. I also serve it with green beans from time to time.

Here I used frozen chicken out of necessity, however, I recommend fresh wherever possible.

I had wanted to do a honey glazed chicken dish for some time. I love the taste of the sweet and sour style dishes. While I was thinking about it, it suddenly occurred to me to add star anise. That idea gave me the push I needed to get up and create the dish.

Ingredients

  • 500 g chicken breasts 2 chicken breasts
  • 110 ml lemon juice 7 US tablespoons
  • 15 ml dark soy sauce 1 US tablespoon
  • Clove garlic crushed
  • 40 ml honey 2.5 tablespoons
  • 2 star anise If you dont like strong anaseed leave out or reduce to 1
  • oil
  • Rice enough for 2 people
  • Baby Spinach

Instructions

  1. Pre Heat your oven to190C Fan 170 Gas 5  Halogen 175C
  2. Mince your garlic
  3. Mix your glaze ingredients together, lemon juice soy sauce garlic and honey
  4. Use the star anise sparingly as they can be strong, you can simply place them in the chicken or use the seeds
  5. Wrap your chicken in foil and put your into a tray
  6. Pour over some of the honey glaze
  7. Cook for 15 to 20 minutes and pour over more of the glaze.
  8. Pour over the glaze to keep moist
  9. Cook for a total of about 30-35minutes.
