Easy No Bake Luxury Blueberry Fruit Meringue Recipe

These blueberry meringue nests with berries are so quick and easy to make yet they look and feel like a luxury treat. They are also easy on the budget at about £1 per person.

Ingredients

  • 1 small tub of Blueberries
  • 1 Small Orange
  • 8 White Mini Meringue Nests shop bought or homemade
  • 227 g Clotted Cream** See notes for alternatives if you can't get hold of it
  • Orange Compote optional, these well without the compote and it is hard to get hold of
  • Sweet freedom or chocolate sauce can make your own if you prefer see below for link
  • mint sprig optional

Instructions

  1. Wash your blueberries and dry.
  2. Peel your orange and separate segments and remove any pith
  3. Place your meringue nests onto a plate
  4. Pop the compote if using into the centre
  5. Place the cream in the centre with more of it on one side.
  6. Wash and add your blueberries and one thinly sliced orange segment

  7. Squirt a small row of chocolate sauce
  8. You can use a mint sprig if you want to. I am lucky I have different varieties in my allotment, but if you don't have them you can leave them out.
  9. That's it, you're done. Enjoy.

Recipe Notes

**Notes on Clotted Cream (Cornish Cream). You can get this over most of the UK and in the US in British import or speciality stores and online Good old Amazon. While it is not quite the same as in the UK according to the reviews it's fairly near. *Notes on Chocolate and Sweet Freedom. I like to use sweet freedom as it is healthier and fewer calories than just chocolate sauce. You can get it in the supermarket or online at Amazon. You don't have to use it though you can just as easily use a dark chocolate sauce or even make it yourself if you prefer.
